Mancini makes this smaller penne rigate, 7mm wide and 40mm long, with ridges on both the outside and the inside of the tube, on its farm in Monte San Pietrangeli, Le Marche. The farm grows its own durum wheat, mills on site, and uses only semolina and water, bronze-die extruded and slow-dried at low temperature. The inner and outer ridges increase sauce contact, and the smaller size suits lighter seafood and vegetable sauces. Cooks in 6 to 8 minutes. Made from single-estate Italian durum wheat semolina and water.
